No GE ingredients in our breads!

At Red Hen, we are proud of the ingredients we use. In addition to our commitment to supporting Organic, sustainable agriculture, we are pleased to support local farmers and businesses by featuring ingredients produced locally, including Vermont-grown wheat and potatoes. Following is a complete list of the ingredients and their sources for our breads.

  • Certified Organic VT-grown whole wheat flour (used in our Pain au Levain, Mountain Miche, Crossett Hill Round/Batard, and Olive bread): Grown and milled by Ben Gleason of Gleason Grains, Bridport, VT.  Certified organic by Vermont Organic Farmers, L.L.C.
  • Certified Organic whole wheat flour (for 100% Whole Wheat Bread):
    Milled by La Meunerie Milanaise of Quebec from Canadian wheat (80% from Quebec). Certified Organic by EcoCert.
  • Certified Organic VT-grown unbleached wheat flour:
    From wheat grown at Aurora Farms in Charlotte, VT!!. Read more about this breakthrough. Certified Organic by VOF.

  • Certified Organic Turkey heirloom bolted wheat flour:
    Grown by 3 different Kansas farmers and milled by Heartland Mill. Certified Organic by QAI. Read more about Turkey wheat here.
  • Certified Organic Turkey heirloom unbleached wheat flour:
    Grown by 3 different Kansas farmers and milled by Heartland Mill. Certified Organic by QAI. Read more about Turkey wheat here.
  • Certified Organic unbleached wheat flour:
    Milled by Heartland Mill of Marienthal, Kansas from winter wheat. Third-party certified by Quality Assurance International.
  • Certified Organic Whole Rye Flour:
    Milled by Heartland Mill of Marienthal, Kansas. Third-party certified by Quality Assurance International.Certified Organic Yukon Gold Potatoes:
    NOFA-VT Certified, grown and harvested by Foote Brook Farm in Johnson, VT.
  • Heirloom Wahpsie Valley cornmeal:  Milled by Champlain Valley Mills from corn grown at Aurora Farms in Charlotte, VT.  Certified Organic by Vermont Organic Farmers, L.L.C.
  • Certified Organic steel cut oats:  From La Meunerie Milanaise of Quebec.  Certified Organic by EcoCert.
  • Certified Organic ground flax seeds:  From La Meunerie Milanaise of Quebec.  Certified Organic by EcoCert.
  • Certified Organic Sesame Seeds:
    Unhulled seeds grown in India, processed by Sparro, and third-party certified by USDA.
  • Certified Organic Poppy seeds:
    From Turkey, certified organic by QAI.
  • Certified Organic Fennel seeds:
    Sourced through Frontier Cooperative, certified organic by QAI.
  • Olives (two types):
    Conventional (not organic), from Greece and Morrocco.
  • Salt:
    Pure, additive-free salt from Cargill.
  • Water:
    Well water from Middlesex, VT.
