Mad River Grain* (Available Everyday)
A veritable orchestra of grains and seeds! (Or maybe a 70's funk band is more your style?) This bread has more ingredients by far than anything else we make, but they all play their part in making a unified song of deliciousness. The seeds and course grains are soaked for improved digestibility and enhanced flavor. One try will have you hooked.

Completely whole grain. Completely organic. Completely delicious. You asked for it, and here it isŠ a bread made entirely of whole wheat. If you think whole wheat bread has to be dense and heavy, think again!

Baguette* (Available Everyday)
A classic French baguette with a delightful, open interior and a thin, crisp crust. We make it in the traditional manner with a yeasted starter known as a “poolish.”

Seeded Baguette* (Available Everyday)
For the seeded baguette, we roll our baguettes in a mixture of poppy, fennel, and certified organic sesame seeds. Since the baguette was invented to maximize crust, the seeded baguette maximizes seeds!

Waitsfield Common* (Available Everyday)
We finally decided to make a basic, no nonsense, do-anything bread. We named it in honor of the old town common in Waitsfield
(Liza's home town). Don't get the wrong idea -- this is an uncommon "common" bread that goes equally well with PB & J or with extra-virgin olive oil.

Crossett
Hill Round* (Available Tue, Fri, Sun)
Our heartiest loaf is named for the hill that Red Hen calls home. With stone-ground, Organic whole wheat and rye flours as its feature, the Crossett is our take on the country loaves of Europe. Hearty, yet not too dense, this bread is especially good with sharp cheeses.

is an alternative size and shape (smaller and oval) for our Crossett Hill Round. It is meant to be a more sandwich-friendly version of our whole grain favorite.

Mountain
Miche* (Available Fri, Sat)
Huge,
round and delicious, the miche is a bread-lovers delight: it has a dark, caramelized crust enveloping a rich chewy interior.

Pain
au Levain* (Available Everyday)
The
subtle sweetness of our Pain au Levain comes from an Organic flour which retains much of the germ and bran of the wheat berry. Add to that an Organic, unbleached wheat flour and our natural leavening, and you have a bread with a chewy texture, a flavor that celebrates wheat, and a dark, caramelized crust. We think that this bread is our most versatile
it makes great toast, sandwiches, or as a vehicle for your favorite cheese or spread.

Potato Bread* (Available Mon, Thur, and Sat)
Whole, roasted, Organic yukon gold potatoes give this special bread a unique color, texture, and flavor. The interior is sweet, moist, and light, and the crust is deep brown from the caramelized potatoes. This bread is our best-keeping variety.

The unusual shape of this traditional Italian loaf gave it its name - ciabatta is Italian for "slipper." Large interior holes are Ciabatta's classic characteristic, making it ideal for
dipping in olive oil and sauces.

Our olive bread weds a subtle sweetness with pungent Kalamata olives. Olive bread goes well with hearty lunch fare and fine Mediterranean cooking.

Pumpernickel* (Available Thu)
Pumpernickel is made from Certified Organic whole rye flour with just a hint of caraway. This bread is hefty, dense, and wholesome. It is perfect for hors d'oevres and pairs nicely with strong cheeses. It also makes toast that will give you a reason to get up saying "Dynamite!" (If you like pumpernickel as much as we do, and say "Dynamite!" when you like something, that is.) It's very good, and good for you. Yum.

Sprouternickel* (Available Thu)
Sprouternickel
is Pumpernickel's cousin, gussied up for the Prom. It begins with Certified Organic whole rye flour and features sprouted Certified Organic spelt berries, Certified Organic sprouted rye berries,
and Certified Organic sunflower seeds. This is a nutty, flavorful,
heavy duty, no-kidding-around-serious-business bread that makes a delicious breakfast loaf. It is also wonderful for re-energizing while hiking, skiing or after playing hockey. Just ask the Hens' hockey team. (Go Hens!)
